Why do my chocolate chip cookies always burn on the bottom?
Okay, I do not usually let them burn but they always come in really dark brown on the bottom and white light on top. Sometimes they are actually still doughy on top, but if I leave them in any longer, they do not burn on the merits. The other thing is that they are very flat. The batch that I just could not pass for chip pancakes Chocolate, no joke. I do not measure and read the ingredients carefully and follow the recipe directions precisely. Other info: I have a gas oven. I experimented with several different recipes, put the cookie sheet in the top and middle; lowering heat 10-20 degrees, and put a pan on rack of my cookies to help buffer the heat, but nothing seems to work! I have thick leaf quality Wilton non-stick cookie .... not the factor-stick anything to do with it? All helpful suggestions appreciated!
To solve the "burnt on the merits "issue a cookie sheet air-curing, a piece of sandstone or line a regular pan with parchment or Silpat paper. To resolve the problem of the spread of cookies too sure that the dough is cold before cooking, and do not cook on a hot plate. Cover and refrigerate your dough in the refrigerator before falling onto the cookie sheet. chilled dough hold its shape, while the paste begins to warm spread thin. You can even press the dough into a log, wrap in plastic wrap and refrigerate for cookie dough slice-and-home cooking. Between lots or let the cookie sheet to cool or switch between 2 or 3 cookie sheets.
